Today I made one more try of baking bread at home, borodinsky this time. The recipe is here. I took a half of the portion, next time it would be better to make about 3/4. Tastes wonderful, also a bit undercooked.
2/3 sounds like:
Опара: 60 г стартера, 200 г ржаной муки, ок. 350 г. теплой воды — 12 часов.
Заварка: столовая ложка с верхом солода, столовая ложка молотого кориандра, 30 г. ржаной муки, вода 30 + 40 г (кипяток). Солод заменяла на столовую ложку густого экстракта для приготовления домашнего кваса — ок. 2 часов или до полного растворения экстракта.
Тесто: 180 г ржаной муки, 300 г пшеничной грубого полола, чайная ложка меда (с верхом), семена кориандра или тмина на посыпку, ок. 200 мл теплой воды. — 30 мин ферментации и 3-4 часа расстойки в форме.
Trying to be perfect in something, we do this mostly for ourselves. No matter whether we respect a client or not, the job we do is ours. So it should be perfect — at least as perfect as it can be without crucial time losses.
Well, let this be a part of my practice. For this blog is my personal area, I just decided to start writing at least some posts in English. This would be a logical follow-on for my Coursera study.
This first attempt is being constantly interrupted by one of the most annoying clients of mine. Oh no, no, he is not that bad as a person, but what is driving me crazy while communicating with all those post-vashmagazin clients is their… writing skills, ha-ha. To be more exact, it is the fact that I constantly have to translate and rearrange their phrases trying to get closer to their real purposes. There are just a few managers (here I mean the very middle ones, just a bit higher that sellers) able to write clear things, no matter in emails or Skype conversations. That’s my persistent headache. I’m sick and tired of translating from bad Russian into good Russian, although that’s a good practice as well 🙂
